6 large ripe tomatoes
8 oz smoked sausage, diced
1 cup sweet bell peppers, diced (red, yellow or orange)
1/2 cup onion, finely chopped
2 cloves garlic, minced
1 cup cooked rice
1/2 cup shredded mozzarella cheese
1/4 cup fresh parsley, chopped
1 tsp Italian seasoning
Salt and pepper, to taste
Olive oil
Preheat smoker to 375°F.
Cut tops off tomatoes and scoop out insides. Drizzle with olive oil, season lightly.
In a skillet, sauté sausage until browned. Add onion and garlic, cooking until soft.
Stir in peppers, cook 2 to 3 minutes. Mix in rice, seasoning, parsley, salt and pepper.
Fill tomatoes with mixture and top with cheese.
Smoke for 20 to 25 minutes, until tomatoes are tender and cheese is melted.
Garnish with fresh parsley. Serve warm.
