1 ½ lbs. Melissa’s Dutch Yellow® Potatoes

1/8 tsp. Kosher Salt

1/8 tsp. Freshly Ground Pepper

1 tsp. Granulated Garlic

3 Tbsp. Unsalted Butter

¼ cup Sour Cream
-
¼ cup Whole Milk
-
1/3 cup Sharp Cheddar Cheese

1 Tbsp. Extra Virgin Olive Oil

1 pound Ground Beef

1/8 tsp. Kosher Salt

1/8 tsp. Freshly Ground Pepper

½ package Melissa’s Organic Baby Cut & Peeled Carrots – chopped

1 Melissa’s Perfect Sweet Onion – peeled; halved & sliced thin
-
3 cloves Melissa’s Peeled Garlic - minced
-
2 Pasilla Peppers – roasted; peeled; seeded; diced

2 Tbsp. All-Purpose Flour
-
2 Tbsp. Tomato Paste
-
1 ½ tsp. Worcestershire

¾ cup Beef Stock or Broth

Directions
Preheat the oven to 400ºF.
Blanch the potatoes in boiling, salted water until just fork-tender, about 20 minutes. Drain the potatoes and place them in a bowl. Add the remaining mashed potato ingredients and mash everything together.
In a sauté pan, add 1 Tbsp. of olive oil and heat for 1 minute. Add the ground beef, salt, and pepper. Brown the beef while crumbling it up with a wooden spoon. Once browned, drain the grease and add the carrots, onions, garlic, and Pasilla peppers. Sauté for 3 minutes, stirring often. Stir in the flour, tomato paste, Worcestershire, and stock, then simmer for 5 minutes.
To assemble, pour the meat mixture evenly into a 9x9-inch baking dish. Top the meat mixture with the mashed potatoes, spreading them evenly across the top. Place it into the oven and bake for 20 minutes. Let cool for 5 minutes and serve.
