Spanish Tortilla is a classic Spanish dish that highlights the simple, delicious combination of Melissaโs Dutch Yellowยฎ Potatoes, sweet onions, and eggs. Thinly sliced potatoes and onions are gently fried until golden, then folded into a seasoned egg mixture and cooked into a perfectly tender, savory tortilla.
Extra Virgin Olive Oil (High quality) โ for frying
1 ยฝ pounds Melissaโs Dutch Yellowยฎ Potatoes โ thinly sliced
1 Melissaโs Perfect Sweet Onion โ peeled; thinly sliced
11 large Eggs
1/8 teaspoon Kosher Salt
1/8 teaspoon Freshly Ground Pepper
1 teaspoon Smoked Paprika
Fresh Chives โ for garnish
Rinse the potatoes in cold water and pat dry.
Heat the olive oil in a high-sided pan. When the oil is hot, add the potatoes and fry until golden brown, about 5 minutes. Remove the potatoes with a slotted spoon and place them on a plate covered with paper towels to drain. Let cool for 15 minutes.
Next, add the onions to the oil and fry until golden brown, about 5 minutes. Remove them and place them on a plate covered with paper towels to drain. Let cool for 15 minutes.
In a bowl, whisk the eggs. Whisk in the salt, pepper, and paprika. Stir in the potatoes and onions.
Place 1 Tbsp. of the frying oil into a hot frying pan over medium-low heat. Pour the egg mixture into the frying pan and cook until the bottom is set, about 30 minutes. Carefully slide the tortilla onto a plate. Place another plate over the tortilla and flip. Slide it back into the pan and cook until completely set, about 2 minutes.
Slide the tortilla onto a plate, cut into wedges, and garnish with chopped fresh chives.
