Ingredients

1 1/2 teaspoon Olive Oil

1/8 teaspoon Crushed Red Pepper

6 cloves Organic Garlic minced

1/2 cup Organic Green Onions sliced

1/3 cup Shallots chopped

2 pounds Organic Green Beans cut into 2 inch pieces

6 ounces Crimini Mushrooms sliced

12 Organic Cherry Tomatoes halved lengthwise

2 packages Organic Baked Tofu cut into julienne strips

1/4 cup Dry Sherry
-
1 tablespoon Tamari

6 large Basil leaves snipped
Directions
Preheat oven to 350 degrees.
Heat oil and crushed pepper in a large stovetop and oven-safe casserole over medium-high heat for 1 minute. Add the next three ingredients and sauté 2 minutes.
Add carrots and green beans, and cook 5 minutes. Add mushrooms, tomatoes, and tofu, and cook 5 minutes. Add sherry and remaining ingredients; stir and cook 2 minutes.
Cover, and bake 30 minutes.
Serve with rice or noodles.
