1 cup Unsalted Butter
1/2 cup Granulated Sugar
1 cup Brown Sugar
1 teaspoon Pure Vanilla Extract
2 Eggs
1 1/2 cup All-Purpose Flour
1 tablespoon Melissa’s Ground Green Hatch Pepper Powder
1 teaspoon Baking Soda
1/2 teaspoon Kosher Salt
1 teaspoon Ground Cinnamon
1/2 teaspoon Ground Cloves
3 cups Old-Fashioned Oats
1 cup Raisins
1/2 cup Mini Chocolate Chips
Preheat the oven to 350ºF.
In a standing mixer, cream together the butter and the next 4 ingredients.
In a bowl, mix together the flour and the next 5 ingredients until well combined.
Gradually add the flour mixture to the butter mixture until well blended. Stir in the oats and raisins.
Take 1/4 cup of the cookie dough and roll into a ball. Place it onto an ungreased baking sheet covered with parchment paper and press it flat. Sprinkle with some of the chocolate chips. Repeat for the remaining dough.
Place into the preheated oven. Bake for 15-18 minutes or until golden. Remove them from the oven and let cool.
