1 Graham Cracker Pie Crust
2 cups pumpkin, cooked
2 eggs
3/4 cup sugar
1 cup evaporated milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg
1/4 teaspoon ginger root
Cut whole pumpkin in half, scraping away seeds and excess fibers. Bake squash on baking sheet in 375 degrees oven for about 30 minutes, or until tender.
Carefully remove flesh from outer shell, discarding outer shell. Let cool. Measure and use in recipe.
Preheat oven to 375 degrees.
Combine all ingredients (except pie crust) in a large bowl. Blend thoroughly with mixer.
Pour mixture into pie crust.
Bake approximately 1 hour or until set.
Let cool completely. Top with whipped cream.
