Cut the mangosteen in half and remove the pulp. Remove any seeds from the pulp. There is typically just one seed per mangosteen.
Place the pulp into a blender and add the vanilla and the juice from the lemon. Blend until smooth.
Pour the mixture through a fine mesh strainer and onto a cooking tray lined with a “Silpat.” (A Silpat is a silicone liner used for baking.)
Smooth into a very thin layer and place into an air fryer. Set the air fryer to dehydrate and cook for about 7 or 8 hours. Cut it into strips and enjoy.
