One-fourth cup Melissa’s Fabbri Caramel Dessert Sauce
Three mandarinquats, thinly sliced and seeds removed
One-half cup unsalted butter, melted
One cup brown sugar
One and one-half cups all-purpose flour
One teaspoon baking powder
One-half teaspoon baking soda
One-fourth teaspoon salt
Two eggs
One teaspoon vanilla extract
Three-fourths cup buttermilk
Heat oven to 350 degrees. Grease a 9-inch round cake pan.
Drizzle caramel sauce into the bottom of the pan and arrange mandarinquat slices on top.
In a bowl, mix melted butter and brown sugar. Pour over the mandarinquats.
In another bowl, whisk flour, baking powder, baking soda and salt.
In a large bowl, beat eggs, vanilla and buttermilk. Gradually add dry ingredients and mix until combined.
Pour batter over the mandarinquats and caramel layer.
Bake 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
Cool five minutes, then invert onto a serving plate.
