These eerie Jelly Eyeballs are the perfect spooky addition to your Halloween party. They’re made with rambutans, filled with jelly or fruit preserves to create the illusion of eyeballs, and are sure to give your guests a fright!
12-15 fresh rambutans (peeled and seeds removed)
1 small jar of black currant or blackberry jelly (or any dark-colored jelly or jam)
Blueberries or blackberries (optional for the center “pupil”)
1 teaspoon edible food coloring (optional, red or black for a more intense look)
Powdered sugar or edible glitter for garnish (optional)
Peel the rambutans and carefully remove the seeds, trying to keep the flesh intact. The peeled rambutan will form the outer “eyeball” shape.
Using a small spoon or a piping bag, fill the hollow center of each rambutan with the jelly. Fill it just to the top to avoid spilling. For extra effect, press a blueberry or blackberry into the center of the jelly to mimic the pupil of the eyeball.
Place the filled rambutans in the refrigerator for about 30 minutes to allow the jelly to set. The rambutan should be slightly chilled and firm by the time you’re ready to serve.
To serve, arrange the Jelly Eyeballs on a dark serving platter for maximum creepy effect. You can scatter some powdered sugar or edible glitter on top for an extra spooky sheen.
Add Halloween decorations like plastic spiders or skulls around the platter to complete the haunted look.
