This is a great combination of sweet and spicy. Give it a try. It's easy to make and very tasty!
1 (18 ounces) package refrigerated chocolate chip cookie dough (such as Pillsbury)
2 fresh New Mexico Hatch Peppers, roasted, peeled, seeded and stems removed (or substitute with Fresh Anaheim Peppers)
1 cup pistachios, toasted and chopped
In a bowl, break up the cookie dough. Chop the Hatch peppers and mix them into the cookie dough. Stir in half of the pistachios.
Scoop the dough into 12 large cookies. Lightly press and top with the remaining chopped pistachios.
Follow the cookie dough package directions to bake and complete the cookies.
