Our Cranberry Clean Snax with raisins make these cookies extra special.

Ingredients

3 Eggs

1 teaspoon Pure Vanilla Extract

2 Melissa’s Vanilla Beans, inner pulp scraped out; pods discarded

1 cup Melissa’s Organic Thompson Seedless Raisins

1 cup Unsalted Butter, softened
-
1 cup Granulated Sugar
-
1 cup Brown Sugar
-
2 ½ cups All-Purpose Flour
-
1 teaspoon Ground Cinnamon
-
1 teaspoon Kosher Salt
-
2 teaspoons Baking Soda

2 containers Melissa’s Cranberry Clean Snax®, crushed
Directions
In a bowl, whisk together the eggs, vanilla extract and the vanilla bean pulp. Mix in the raisins and set aside for 1 hour.
Preheat the oven to 375ºF.
In a standing mixer, cream together the butter and both sugars. Add the flour, cinnamon, salt and baking soda and mix well.
Mix in the egg mixture and the Clean Snax® until well combined.
Make sure to leave a little room between each spoonful.
Place the cookies in the preheated oven and bake for 12-15 minutes or until golden brown.
Remove from the oven and let cool.
Recipe Note
Don't let the 70 minute prep time deter you. 60 minutes of that time is inactive.
