1/4 cup Coconut Flour
1/4 cup Almond Flour
1/2 package Carob Pods, finely ground
1/2 cup Chopped Cashews
1/4 teaspoon Kosher Salt
1/2 cup Unsalted Butter
1 cup Granulated Sugar
2 Eggs
1 teaspoon Pure Vanilla Extract
Preheat the oven to 350ºF.
Grease a brownie pan and set aside.
Place all of the dry ingredients, except for the sugar, in a bowl and whisk to combine. Set aside.
Cream together the butter and sugar in a standing mixer until light and fluffy. Add the eggs, one at a time, and add the vanilla. Mix until well combined. Slowly add the dry mixture and mix until just combined.
Pour the mixture into the prepared brownie pan and level it with a spatula or wooden spoon. Place in the preheated oven and bake for 30-40 minutes or until a toothpick inserted into the center comes out clean. Set aside to cool; then cut into 16 pieces.
