A rich and tangy blend of sun-dried tomatoes, cream cheese, and garlic, rolled in toasted pine nuts or almonds for a flavorful crunch. Perfect for make-ahead entertaining—serve with crackers, cured meats, fruits, or honeycomb for an elevated appetizer board.
Ingredients

8 ounces cream cheese, softened

6 ounces (2 packages) Dried Red Tomatoes

1/4 cup oil

2 cloves peeled garlic, minced

1/2 cup pine nuts, toasted

1/2 cup almonds (or more), chopped and toasted
Directions
Position knife blade in food processor bowl; add first 5 ingredients. Process until smooth. Cover and chill at least 3 hours.
Shape half of the mixture into a ball; roll in toasted pine nuts or almonds, pressing gently to make nuts adhere. Repeat procedure with remaining mixture and nuts.
Wrap each ball in plastic wrap. Chill. Store in refrigerator up to 5 days. Serve with unsalted crackers, dried and fresh fruits, salted meats, red walnuts, honeycomb, etc.

If a processor is not available, this recipe may be executed using a powerful hand or stand mixer with paddle or beaters.
