2 Melissa’s Organic Garnet Yams, thinly sliced (skin on)

1 tablespoon curry powder

1 teaspoon kosher salt

High-heat oil, for frying

2 cups organic plain Greek yogurt

2 Melissa’s Organic Mini Cucumbers, finely chopped

1/2 cup halved Melissa’s Organic Grape Tomatoes, seeds removed

2 tablespoons chopped fresh cilantro
-
1 tablespoon chopped fresh dill
-
1 garlic clove, finely minced
-
1 organic jalapeño, seeded and minced

1/2 teaspoon ground cumin or coriander

Sea salt and freshly cracked black pepper, to taste

For the Creamy Herb Dip
Directions
Make the Chips
Stir together curry powder and salt in a small bowl; set aside.
Heat oil in a deep skillet or heavy-bottomed pot to 350°F.
Fry yam slices in batches for 2–3 minutes until crisp and golden. Drain on paper towels and sprinkle immediately with curry salt.
Make the Dip
In a medium bowl, mix yogurt, mini cucumbers, grape tomatoes, cilantro, dill, garlic, jalapeño, and cumin.
Season with salt and pepper to taste. Chill for 10–15 minutes before serving.
To Serve
Plate chips with the chilled dip and serve with raw veggie spears or apple slices for added crunch and contrast.
