1 container Black Beans (cooked according to package) drain and reserve liquid
1 bag Fiesta Cheese
1 head Organic Iceberg Lettuce chopped
3 Organic Tomatoes chopped
1 bag Tortilla Chips
15 bunches Cilantro
20 Jalapeno Chile seeded
1/4 cup Lemon Juice
8 cups Mayonnaise
4 cups Sour Cream
Salt to taste
While still warm, mash beans with as much liquid as needed to keep them slightly loose.
Layer in a casserole dish, beans, cheese, and lettuce.
Ladle dressing to cover and sprinkle entire top with tomatoes. Serve with chips.
Blend all ingredients in food processor and season to taste.
