Cold Rice Drink (Fresco De Arroz)

Ingredients

1 cup Rice
2 - quarts boiling water
1 1/2 cups Sugar
1 cup Orange Juice
1/4 cup Lemon Juice (use Lemon Juice)
1 cup Pineapple Juice
1 cup Organic Pineapple cut into 1/4 inch cubes
1/4 teaspoon Canela (Cinnamon Sticks) ground to powder
3 tablespoons Orange Peel grated

Directions

Wash the rice in several changes of water.

Have the water boiling in a saucepan and add the rice.

Cook for 35 minutes, or until extremely soft.

Force the rice and liquid through a sieve, or puree in a blender.

Combine the sugar, orange juice, lemon juice, and pineapple juice in a saucepan.

Cook until syrupy, about 10 minutes.

Add the strained rice, pineapple cubes, cinnamon, cloves and orange peel.

Bring to a boil. Remove the cloves.

Chill and serve very cold, garnished with additional fresh pineapple or other fresh fruit.
