Sweet and Spicy Mushrooms

1 small Organic Yellow Onion
1 Organic Apple
½ Organic Bell Pepper
1 Fresh Serrano Chile
1 stalk Organic Celery
1 sprig Thyme, stems removed
1 pound Mushrooms
½ cup Thompson Seedless Raisins or Flame Seedless Raisins
½ cup Walnuts, chopped
2 tablespoons Butter
2 tablespoons Extra Virgin Olive Oil
2 tablespoons Curry Powder
1 pinch Cayenne Pepper
Salt to taste

Coarsely chop up the onion, apple, sweet and hot peppers, celery and thyme. Melt the butter and heat the oil in a saucepan, add all the chopped ingredients and the thyme, then stir in the curry powder and the cayenne, making sure it's evenly blended.

Stir in the mushrooms and raisins. Cover the saucepan and cook on a low heat for about 25 minutes. Add the walnuts for another 5 minutes. Season to taste with salt and serve.

Makes 6-8 servings.
