Stuffed Shishito Peppers

Stuffed Shishito Peppers

1 pound Shishito Peppers
½ pound Feta Cheese
Italian Seasoning, to your taste

Roast the peppers over the stove-top burner or in the oven. In a bowl, combine the cheese and Italian seasoning. Pop the stem off of the peppers and stuff them with the cheese mixture. Serve and enjoy.

Makes 6-8 servings.
