Plantain Fritters

Ingredients

1/4 cup Butter
1 clove Organic Garlic mashed
2 medium Plantain Bananas (or Green Bananas) peeled and grated
Oil for frying

Directions

Mix butter and garlic in a small bowl and set aside.

In a medium sized, heavy saucepan, heat the oil for frying. While the oil is heating, make small patties out of the grated plantains, using about 1/4 cup at a time, pressing firmly together.

Fry until golden brown, turning once, and then drain on paper towels. Repeat until all patties are cooked.

Brush one side of the patties with the garlic butter before serving.
