Hidden Rose Applesauce

6 Melissa's Hidden Rose Apples -- peeled and cored
1 cup Water
1 Tbsp. Meyer Lemon Juice
1 3 oz. package Melissa's Dried Currants

Place all ingredients in a sauce pan (except currants) and bring to a boil.
Reduce heat, cover and simmer until apples are soft, about 30 minutes.
With a slotted spoon, carefully place the apples in a food processor or blender and puree. If the mixture is too thick, pour in the residual liquid from the sauce pan as needed.
Stir in the currants and serve immediately for warm sauce or refrigerate for future use.

The currants give an added sweetness to this sweet-tart applesauce.
