Malanga Chips

1 pound Malanga
Corn Oil for deep frying Salt to taste

Scrub and peel Malanga. Place in cold water till ready to cook.

In a medium sized pot, heat oil about 1 inch deep to 350°F. With a 2 millimeter slicing blade in food processor, cut Malanga into paper thin slices. Blot dry with paper towel.

Place slices gently in oil. Fry until golden on both sides, about 2 minutes. Drain on paper towels, sprinkle with salt. Serve at once, or keep warm briefly in a 200°F oven.
