Soyrizo and Roasted Baby Dutch Yellow Potatoes

2 pounds Baby Dutch Yellow® Potatoes (DYP's)washed and halved
Extra Virgin Olive Oil as needed
Salt and Pepper to taste
1 package Soyrizo


Preheat the oven to 425ºF. In a large bowl, toss the DYP's with the olive oil, salt and pepper.

Roast in the oven until fork tender. Prepare the soyrizo per the package directions.

As the soyrizo begins to breakup, add the potatoes to the pan. Serve hot.


This makes a great healthy brunch dish.
