Cucumber Fan, Making A

Slice a cucumber in half lengthwise, then cut one of the halves into 1-1½ inch pieces.

Using a sharp knife, thinly slice cucumber section (as shown in the illustration), taking care to leave one edge intact.

Fold up every other slice as shown, tucking in ends to secure. Flare out the edges of the cucumber and use to garnish a serving platter.
