Guacamole

Ingredients 

1 teaspoon Organic Lemon or Limes juice freshly squeezed 
2 Organic Tomatoes finely chopped 
1/2 Onion finely chopped 
1/2 clove Peeled Garlic mashed and minced 
1 Jalapeno Chile finely chopped 
2 tablespoons Cilantro finely chopped 
2 ripe Organic Avocado 

Directions 

Mix together all the ingredients, except the avocados, in a bowl and sprinkle with a little lemon or lime juice. 

Cut the avocados in half, remove the seeds and scoop out the flesh with a spoon, making sure to scrape the skins clean. 

Mash the pulp with a fork and add it to your mixture. 

Mix everything well, making sure that you don't make it too smooth. 

The texture remains a little coarse which is why it is not a good idea to use a food processor for this dish. 

Serve it as an accompaniment to a meal or better still as a lovely starter. 

Spoon it into a serving bowl, sprinkle some chopped cilantro over it and serve with tortilla chips which can be used to scoop up the guacamole.
