Green Mango Salad

Ingredients 

1 tablespoon Chile paste 
1 tablespoon Chunky Peanut Butter 
1 teaspoon Fish Sauce 
1 whole Organic Lime juice freshly squeezed 
1 whole Green Mango peeled and unlined 
1 whole Green Tomato wedges, sliced thin 
2 whole Shallots sliced thin 
1 whole Pickling Cucumbers sliced thin 
1 tablespoon Salt to taste 
1 tablespoon Pepper to taste 
1 whole green onion - sliced or chopped 
1 Red Bell Pepper stemmed & seeded 
1 basil - chopped or mint (Fresh)

Directions 

Combine the chile paste, peanut butter, fish sauce, lime juice, and fish powder. 

Toss with the mango, tomato, shallots, and cucumber. 

Add salt and pepper to taste. 

Garnish with the green onion, peppers, and basil, and serve.
