Chef Tom's Texas Caviar

1/2 each Melissa's Perfect Sweet Onion -- diced
1 each Red Bell Pepper -- diced
1 each Green Bell Pepper -- diced
1 each Fresh Serrano Chile -- minced
1 each Fresh Jalapeno -- minced
2 cloves Melissa's Peeled Garlic -- minced
1 each Fresh Roma Tomato -- diced
2 11 oz. packages Melissa's Steamed - Ready To Eat Blackeyed Peas -- rinsed or... 2 11 oz. tubs Melissa's Blackeyed Peas -- cooked; cooled; rinsed
1/4 cup Seasoned Rice Vinegar to taste
Sea Salt and Freshly Ground Pepper


In a bowl, gently combine all of the ingredients.
Refrigerate for 1 hour to incorporate flavors.
This is a great "Good Luck" dish for the New Year. Try it with some chips for an appetizer.
