The Keitt Mango is a large-sized mango, similar to the Haden variety. Although they are fully green when ripe, the flesh of the Keitt will be soft to the touch.
Don't let the green fool you, when ripe, Keitt Mangoes have deep green skin and golden-orange flesh. The Keitt is left on the tree longer than other varieties, producing very sweet fruit. The fiber-free flesh creates a creamy texture, making the Keitt Mango perfect for salads, salsas, smoothies, sorbets and sauces. The creamy flesh highlights a honey-sweet flavor with hints of lemon. Eat the mango raw, out-of-hand, or use in sorbet, cocktails, smoothies and fruit salads. To cook, include in sweet or savory rice dishes.
To eat as-is, first, cut in half and dice. Run the knife just above mango skin to slice away chunks. Repeat with the other half. Mangoes pair well with apple, berries, caramel, citrus, coconut, melon, vanilla and cinnamon.
Choose firm fruits with flawless skin and a fresh scent. Since mangoes are usually sold firm, leave at room temperature for a few days to soften until yielding to gentle pressure. Refrigerate once ripe for up to a week or more.
