Before entering the US, the fruit is irradiated. Why irradiate food? The process of irradiating fresh fruits and vegetables takes place at a prescribed very low dose (<1,000 Gy), and its only purpose is to eliminate the chances of pest infestation.

Choose fruit that is firm with a slight give, has flawless skin and a fresh scent. Refrigerate ripe mangos for up to a week while you wait to enjoy.
