1 pound black beans
1 tablespoon cooking oil
1/2 cup onion, diced
3 cloves peeled garlic, chopped
1 organic bell pepper or Enjoya pepper, chopped
1/2 cup organic celery, chopped
1/2 cup cilantro, chopped
Salt and fresh ground black pepper to taste
Cover beans with water and soak overnight. Rinse and drain several times. Cook with at least 7 cups of water for 3 hours. Add more water if needed. When the beans are tender, add the remaining ingredients and cook another ½ hour.
To serve, you may want to add any or all of the following: Fresh lemon juice, Tabasco, sour cream, chives, green onions.
Or add one or two eggs, cook for another 2-3 minutes, serve with flour or corn tortillas.
