4 large portobello mushrooms, stems removed
1 cup smoked pimento cheese
1 Tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
Salt and pepper, to taste
1/4 cup breadcrumbs (optional)
Fresh parsley, for garnish
Preheat oven to 375°F.
Clean mushroom caps with damp paper towel.
Brush with oil, season with paprika, garlic powder, salt and pepper.
Fill each cap with pimento cheese. Top with breadcrumbs if using.
Bake for 20 to 25 minutes, until mushrooms are tender and cheese is bubbly.
Garnish with parsley and serve warm.
