Ingredients

4 tablespoons oil

2 organic yellow onions, sliced

1 clove organic garlic

4 large Organic Russet Potatoes, peeled and diced. (or substitute with 10-12 Yukon Gold Potatoes)

1 cup water
-
1 can organic tomatoes, liquid reserved

1 1/2 tablespoons coconut milk
-
1/2 teaspoon turmeric
-
1/2 teaspoon ground cinnamon

1/2 teaspoon cardamon

1/2 teaspoon black pepper, ground

1/2 teaspoon cumin
-
1/2 teaspoon ginger root, ground

1/2 teaspoon sugar

1/2 teaspoon chili powder

1/2 teaspoon salt
Directions
Heat oil, add onion and saute until transparent. Add garlic and potatoes and saute 2 additional minutes.
Add remaining ingredients, bring to a boil, and simmer until potatoes are cooked. About 20-30 minutes.
If too thick, add reserved tomato liquid. Serve over rice.
