1 tub Black-eyed Peas
Salt to your taste
1 Red Onion, diced, or 2 cloves Garlic, minced
Black Pepper to your taste
1/2 teaspoon Cumin (optional)
5 tablespoons Olive Oil
1/3 cup Lemon Juice
Place the peas in a saucepan and cover with water.
Boil the peas until tender, about one hour. Drain and dry the peas.
Mix all remaining ingredients together in a bowl. Serve.
