1 tablespoon Oil
1½ cups Yellow Cornmeal
1½ cups All-Purpose Flour
1½ teaspoons Baking Powder
1½ teaspoon Salt
¼ cup Brown Sugar
½ cup Unsalted Butter, melted
1 cup Roasted Sweet Corn, rehydrated
3 large Eggs
1⅓ cups Milk
1 cup Maui Onions, finely diced
1 cup Fire Roasted Peppers, drained peeled and chopped
Preheat oven to 400 degrees.
Light oil a baking pan. Mix together all dry ingredients.
In a separate bowl, combine eggs, butter and milk.
Next, add to the wet ingredients, the onions and peppers.
Combine wet and dry ingredients together. Mix thoroughly.
Pour batter into pan and bake for 30 to 35 minutes.
