1 pound Firm White Fish
1 small Onion
1 clove Peeled Garlic
1 small Fresh Pepper (Serrano, Jalapeño, etc...)
4 sprigs Cilantro
8 Organic Lime, juice freshly squeezed (enough for at least 3/4 cup of juice)
Salt and Fresh Ground Black Pepper to taste
Cut fish into ½ inch cubes.
Mince the onion, garlic, and Mince the onion, garlic, and pepper coarsely. pepper coarsely.
Finely chop the cilantro.
Juice the limes and strain to remove the pulp.
Shrimp can be substituted for the fish.
Mix all of the ingredients and refrigerate, tightly covered, for at least 3 hours.
Serve with corn tortillas, tortilla chips, or crackers.
