1 stick unsalted butter, softened
2 tablespoons New Mexico Pepper Powder
1 tablespoon ground cinnamon
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
6 organic sweet potatoes (such as Organic Baby Charleston Yams)
Using an electric mixer beat first 5 ingredients in medium bowl until fluffy.
Preheat oven to 400°F.
Line large baking sheet with foil. Place sweet potatoes on sheet; Bake until tender about 1 hour or until done.
Cut each sweet potato lengthwise and spoon 1 tablespoon butter into each potato. Serve.
