Tarocco Blood Oranges originated from the Island of Sicily. If this lower acid variety is not in season, Moro, Sanguinelli, or other varieties will also make a tasty syrup.

Ingredients

3 cups Blood Oranges, Tarocco variety preferred, juiced
9 tablespoons sugar
1 1/2 tablespoons Blood Orange peel, grated

Directions

Stir all ingredients in heavy medium saucepan over medium heat until sugar dissolves.
Increase heat and boil until syrup is reduced to 1 1/2 cups, about 20 minutes.
Allow to cool and transfer to clean container. Cover and refrigerate until cold.

Recipe Note

Keeps, refrigerated, up to 2 days. A great treat on pancakes, over pound cake, or in cocktails.
