Ingredients

4 ears sweet red corn, roasted on broiler or BBQ and cleaned off cob

2 whole Jalapeno Chiles, broiled, de-seeded and diced small

2 whole tomatoes, cored and diced medium

1 whole yellow Bell Pepper, seeded, pith removed and diced small

1 whole red onion, diced small
-
1/2 cup lime juice
-
2 tablespoons organic garlic, roasted and minced

Salt and pepper till desired
Directions
Roast and prepare all vegetables as instructed above. Carefully mix all ingredients in small bowl and finish with salt and pepper, to taste.
Chill and serve with grilled chicken or beef or simply as a side dish of salsa with chips.
