1 Melissa’s Fresh Carolina Reaper
2 Roma Tomatoes
2 tablespoons Extra Virgin Olive Oil
1 pinch Kosher Salt
1 head Melissa’s Black Garlic, cloves peeled
1 cup White Wine Vinegar
1/2 cup Water
1 tablespoon Granulated Sugar
1 tablespoon Brown Sugar
1/2 Lime, juiced
Preheat the oven to 425ºF.
Toss the Reaper and tomatoes with the olive oil and salt. Place them on a sheet pan and roast in the preheated oven for 10 minutes. Remove them and set aside to cool slightly.
Place the Reaper and the tomatoes in a blender and add the rest of the ingredients. Process until completely blended.
Be careful when blending hot ingredients.
