4 medium Cactus Pears (Prickly Pear) peeled
1/3 cup sugar
1 tablespoon lemon juice (use lime juice)
1 tablespoon orange liqueur
Purée cactus pear (prickly pear) in food processor or blender, then press through a fine strainer into a bowl to remove seeds. There should be about 3 cups.
In a medium-size sauce pan combine 2 cups of the purée and 1/3 cup sugar, simmer rapidly over med-high heat, stirring frequently, until reduced to 1 cup. Cool.
Combine cooled mixture with the remaining 1 cup puree, lime juice and orange liqueur and add additional sugar if needed. Serve with pork loin or beef.
