1/2 ripe Papaya, peeled, seeded and cut into 1/4 inch dice
1/4 ripe Organic Pineapple, peeled, cored and cut into 1/4 inch dice
1 ripe Organic Mango, peeled, seeded and cut into 1/4 inch dice
1 small Red Onion, peeled and cut into 1/4 inch dice
1 Organic Bell Pepper (use Red Bell Pepper) trimmed and cut into 1/4 inch dice
3 Yellow Chiles, seeded and chopped
1 tablespoon Cilantro, finely chopped
1 tablespoon Rice Wine Vinegar
1 tablespoon Olive Oil
1 pinch Salt
Combine all ingredients and season to taste.
Set aside for 20 minutes while flavors meld.
Serve at room temperature or chilled.
