This salsa should have a sweet and mildly sour taste!
Ingredients

1 pound Lychees, halved, peeled and seeded

1/2 Organic Bell Pepper (use Yellow Bell Pepper) cored, seeded and diced

1/2 Organic Bell Pepper (use Red Bell Pepper) cored, seeded and diced

1 Jalapeno Chile, seeded and minced
-
3 Organic Green Onions, trimmed and finely chopped

3 tablespoons Organic Limes juice, freshly squeezed
-
1 tablespoon Chopped Crystallized Ginger

1 tablespoon Sugar

Salt to taste
Directions
Combine all ingredients in a small mixing bowl, gently tossing to combine.
Season with salt to taste.
Recipe Note
Use salsa in traditional way with chips or served over grilled chicken. Also great combination with any white baked or grilled fish.
