3 Organic Bell Pepper (use Green Bell Pepper), cored and seeded
3 Organic Bell Pepper (use Red Bell Pepper), cored and seeded
1/2 Jalapeno Pepper
3 medium Onions
1/2 cups Cider Vinegar
1/2 cups Sugar
1 teaspoon Salt
In a food processor grind all the peppers and onions to a coarse texture, but do not puree.
Scrape into a non-reactive saucepan and add enough water to cover (about 1 cup).
Bring to a boil and boil for 5 minutes. Strain and return the solids to the saucepan.
Add the Vinegar, Sugar, and Salt; boil for 5 minutes more.
Fill hot, sterilized canning jars and seal property. Will keep indefinitely.
