4 tablespoons apple cider vinegar
¼ Melissa’s Perfect Sweet Onion, minced
1 clove Melissa’s peeled garlic, minced
¾ cup extra virgin olive oil
2 teaspoons real mayonnaise
2 teaspoons Dijon mustard
Kosher salt and freshly ground pepper, to taste
1 lb. fresh arugula, washed and dried
2 cups Melissa’s Red Muscato™ Grapes, halved
4 tablespoons pepitas
1/3 cup crumbled feta cheese
¾ cup shaved Parmesan
In a bowl, add the vinegar and the next 6 ingredients and whisk well to combine.
In a large bowl, add the arugula, grapes, Pepitas and feta cheese.
Add the contents from the other bowl and mix well.
Plate the salad on 6 or 8 chilled plates, garnish with the Parmesan and serve.
