1/2 pound each Wax Beans (use purple and yellow) washed and trimmed
1 large red onion, diced
1/2 cup seasoned rice vinegar
Kosher salt to taste
Fresh ground pepper to taste
Crushed red pepper flakes to taste
Combine all of the ingredients in a bowl, cover and chill overnight.
This is one of those recipes that gets better the longer it marinates.
