2 packages Melissa’s Organic Steamed Red Beets
2 packages Melissa’s Peeled and Steamed Garbanzo Beans, rinsed; drained
2 Granny Smith Apples, cored; diced
4 cups Fresh Baby Arugula, washed; dried
1 cup Crumbled Feta Cheese
Freshly Ground Pepper to taste
In a large mixing bowl, gently combine the beets and the next 3 ingredients.
Place the mixture, equally, on 6 chilled salad plates.
Top with the cheese, season with the pepper and serve.
