1 medium Jicama, prepared into thin matchsticks
2 whole Organic Apples, do not peel; cut into matchsticks
1 cup Sea Bean (Salicornia), trimmed to similar size as jicama and apples
4 tablespoons Light Olive Oil
1 tablespoon Lemon Juice
2 tablespoons Blue Cheese, crumbled
Fresh Ground Black Pepper to your taste
Gently toss jicama, apples and Sea Bean together. Mix and whisk dressing ingredients and drizzle over salad.
