Ingredients

1/2 leeks, sliced in half moons

1 organic carrot, sliced in half moons

3 sprigs Italian parsley

3 sprigs dill

1 pound salmon fillets, pin bones removed

1 tablespoon capers
-
2 slices Meyer Lemons wheels

1 tablespoon butter
-
2 sprigs thyme
Directions
Pre-heat oven to 400.
Cut 2 large heart-shaped pieces of parchment paper. In the center of one piece place leek, carrot, parsley, dill and one wheel of lemon. Top with salmon fillet, season with salt and pepper and add butter, capers, lemon wheel and thyme sprigs.
Top with remaining sheet of parchment and seal edges by folding sides over together retaining the heart shape.
Place package onto baking sheet and bake for 10 minutes. Cut parchment open being careful not to burn yourself with the escaping steam.
