Bagels make the perfect vehicles for delicious dips, juicy fruits and crisp veggies, and this DIY brunch spread has something for everyone! When menu planning, think beyond butter and cream cheese, and add hummus, nut butters, pestos, and Melissa’s Toum to your spread. When it comes to fruits and veggies, get creative. In addition to the usual suspects (sliced avocado, cucumbers, onion, tomatoes, and watermelon radish), sliced beets, bananas, and mangoes all pair nicely with the right bagel.
Ingredients
-
8-10 bagels (plan for 1-2 per person; see tip below)
-
Spreads of choice. We like: salted butter, cream cheese, hummus, almond or peanut butter, Melissa’s pestos, and toum
-
1 lb. lox, smoked fish, and/or white fish spread
-
2 Melissa’s Heirloom Tomatoes, sliced
-
1 large cucumber, or 2-3 small cucumbers, sliced into rounds
-
1 red onion, finely sliced crosswise (option to pickle)
-
Capers
-
2 ripe avocados
-
Pomegranate arils
-
1 large watermelon radish, thinly sliced
-
1 lb. strawberries
-
Melissa’s x Fabbri Chocolate Gourmet Dessert Sauce
-
1 lemon, quartered
-
Sea salt
-
Black pepper
-
Fresh dill, to garnish
-
Fresh mint, to garnish
Directions
Most ingredients can be prepped in advance. Slice tomatoes, cucumbers, avocados, berries and lemons before serving. Sliced radish stays crisp when kept in water.
Pre-slice bagels, and set up a DIY toaster station nearby.
Use a serving spoon or knife with individual dips.
Serve alongside a fruit and/or green salad.
Recipe Note
There are no rules when having a bagel brunch. You know what you and your family likes, so get creative and have fun!
Recipe Tip
Bagels freeze nicely, so don’t be afraid to bring home extras. Pre-slice leftover bagels before freezing, so they’re easier to grab and go during the week.
