Ingredients

1/4 fresh pineapple, peeled, cored, diced small

1/4 red onion, peeled, diced small

1/2 Serrano Chile, stem removed, minced

1/2 Melissa’s Butterscotch™ Pear, diced small
-
1 tablespoon Melissa’s Cilantro, chopped
-
1 lime
-
Kosher salt & freshly ground pepper, to taste

1 package Melissa’s Cooked Quinoa, sliced into 6-8 rounds

Spray olive oil
Directions
In a bowl, combine the pineapple and the next 4 ingredients.
Add the juice of the lime and the salt and pepper. Mix well and set aside.
Prepare a hot grill pan.
Season 1 side of the quinoa patties with the pepper and spray them with the olive oil.
Place the patties, seasoned side down, on the pan. Season the other side and spray with the olive oil. Cook until you get nice grill marks then flip and repeat.
To serve, place a patty on a serving plate and top with the salsa.
