These Campfire Nachos are loaded with Melissa’s Steamed Six-Bean Medley, Soyrizo, and fresh toppings for a smoky, savory snack or meal that’s perfect for outdoor adventures. Cooked in a cast iron skillet, this dish is a quick and easy way to bring bold flavors to your campsite.

Ingredients

1 bag tortilla chips

1 pouch Melissa’s Steamed Six-Bean Medley

1/2 cup Soyrizo (plant-based chorizo)

1/2 cup Melissa’s Heavenly Villagio Marzano® Tomatoes, diced

1/4 cup black olives, sliced

2 green onions, chopped
-
1/4 cup fresh cilantro, chopped

1 avocado, diced
-
1/4 cup pickled jalapeños

Lime wedges, for serving

1 cup shredded cheese (cheddar, Monterey Jack, or vegan cheese)
Directions
Build a campfire and let it burn down to hot coals, creating an even heat source. Place a cast iron skillet on the grate over the fire to preheat.
Add the Soyrizo to the preheated skillet and cook for 3-5 minutes, stirring frequently, until heated through. Remove from the skillet and set aside.
In the same skillet, create a layer of tortilla chips, followed by Melissa’s Steamed Six-Bean Medley, cooked Soyrizo, and diced Heavenly Villagio Marzano® Tomatoes. Sprinkle with shredded cheese and repeat the layers until all ingredients are used, ending with a generous layer of cheese on top.
Cover the skillet with aluminum foil or a cast iron lid. Cook over the fire for 5-10 minutes, or until the cheese is fully melted and bubbling.
Carefully remove the skillet from the fire using heat-resistant gloves. Top the nachos with black olives, green onions, cilantro, diced avocado, and pickled jalapeños.
Serve the nachos directly from the skillet with lime wedges on the side. Enjoy them hot, with the smoky flavors enhanced by the campfire.
